Toppings require ½ cup fresh spinach leaves, ½ cup sliced mushrooms, ¼ cup sliced black olives, ½ cup broccoli (florets, lightly steamed), ½ cup halved cherry tomatoes, ¼ cup thinly sliced red onions, ½ cup cubed and lightly pressed tofu, and ¼ cup part-skim mozzarella cheese (optional). 

Instructions to follow:

Preheat the oven (400°F or 200°C) with a baking sheet or parchment paper. Rice the cauliflower by pulsing the florets in a food processor till it resembles rice.
